Greens + Protein Mint Cream Cookies by @sarahtannernz 💚
For the cookies…
3/4 cup coconut flour
1/2 cup almond meal
1 scoop vanilla protein powder
1/2 cup almond butter
1/4 cup maple syrup
Pinch of salt
For the Mint Cream Centre…
3/4 cup cashews, soaked and drained
2 tsp greens powder
3 TBS coconut cream
3 tsp maple syrup
2 drops organic mint essential oil
To finish, 1 cup melted dark, vegan chocolate
Place the cookie ingredients in a food processor and combine until a dough forms.
Roll out as flat as you can with a rolling pin, between 2 pieces of grease proof paper helps.
Using a small round cookie cutter, create the cookie circles, and place in the fridge to set.
Prepare the mint cream by combining all the ingredients in a blender and whiz until silky smooth.
Take the cookies out and spread a small amount of the cream in the centre of on cookie base, then carefully sandwich another cookie round on top (kind of like an oreo effect). Place in the freezer to set for around 30 minutes.
Melt the chocolate and lastly, coat the cookies and place back in the fridge until you are ready to enjoy! #bestofvegan
